Sausage lovers, time is running out to enter the Hafner’s Master Cook competition which aims to find amateur cooks with the tastiest and most original recipes that feature the humble sausage – the deadline is midnight on May 31st.

“People from Northern Ireland love sausages”, said Stephen O’Carroll, Marketing Director. “We are expecting a great response to our search for sizzling recipes, and we will no doubt see loads of delicious snack suggestions or mealtime treats that will tickle the taste buds of our judges.”
There are three judges who all love sausages to ensure the best recipes make it to the final, which is taking place at Belfast Cookery School on June 25th.
Stephen continued: “The judges are chef supremo, Ian Hunter, owner of Belfast Cookery School, funnyman and sausage lover, Ciaran Bartlett and radio personality, Carolyn Stewart who also has an award-winning range of pickles, sauces and marinades.
“The deadline for entries is midnight on May 31st so get those juices flowing and send us in a recipe that has winning potential.”
Following the judging process, three shortlisted sausage lovers will compete in a live final at Belfast Cookery School where they will prepare their signature dish for the judges. The winner will be crowned ‘Hafner’s Mastercook 2024’ and walk away with a £500 cash prize.
Speaking on behalf of the judges, chef Ian Hunter, said: “We are looking forward to hearing from home cooks, aspiring foodies and amateur chefs with a real passion for creating dishes that pack a sausagey punch, are original and most of all, tasty. What’s the big secret of the big Hafner’s flavour? What’s made us a firm (and tasty) favourite of Irish families for over a hundred years now? And why, back in the day, when people knew their sausages, were there queues round the block for Hafner’s spicy, handmade sizzlers?
There’s much more goes into our sausages than you think… family history, craftsmanship and recipes that have been handed down generations. Go on, dig in, and find out what’s made us sausagely famous across the land!

Once the Hafners arrived in Dublin, sausages would never be the same again! Sausage people through and through – from Bavaria – we set out to make the tastiest ever sausages that Ireland had eaten.
In 1882, we opened a shop in South Great Georges Street. In fairness, it was more than a shop, it was a proper pork emporium. There was the smell of hams roasting and strings and strings of sausages, that folk were mad for getting on the table.
And this was no flash in the pan. We opened two more Dublin shops and our sausage celebrity spread. Lads would head back from town to the west with a demand that they “don’t forget a pound of Hafner’s”.
Grannies were even known to sew them into their petticoats to smuggle them across the border to homes in the North!
The more we perfected our hand-crafted recipe, the more Hafner’s became a bit of a legend. There’s Dubliners even today who remember how the billboard on the 31 tram would set their mouths watering on a rainy city morning.
The days of old trams and folk galloping home with their sausages wrapped up in brown paper are a bit behind us now, but Hafner’s recipes still taste as good as they always did.
