Feasting on Weeds

Ormeau Park 17 April

Run by Clare, a cook and foraging guide living in Belfast, “Feasting on Weeds” foraging walk in Ormeau Park opened our eyes to the abundance of fantastic, free, sustainable food sources available in the Irish countryside, seaside and city and how to incorporate them into unique and experimental dishes.

Her passion for developing relationships with the outdoors in a way that values the environment and celebrates our landscape is clearly evident.

For over two hours, Clare’s informal yet informed style of delivery kept us educated and entertained; wild garlic isn’t just for pesto-use the leaves for Zhoug, or Chimichurri, and pickle the flowers or scatter them on freshly baked pizza; make tea from the dried leaves of the Hawthorn tree, or use apple and cherry blossom as edible cake decorations or to garnish a cocktail; create Noyau-a citrussy Beech leaf liqueur, or use Larch leaves instead of dill for a subtle herbal hit in your cookery.

We were then treated to a lunch of Nettle Roti Flatbread, with Three Cornered Leek Hummus, and a Berberis & Sea Buckthorn cordial diluted with ‘Sticky Weed’ flavoured water. To finish, we had a dessert of rhubarb and Berberis. A fascinating and delicious way to spend an afternoon.
